Ingredients:
4 tilapia fillets
1 navel orange, sliced
2 Tbsps butter
1 sweet onion, diced
¼ Sherry cooking wine
Olive oil, to grease the baking sheet
Salt, to taste
Pepper, to taste
Directions:
Pre-heat the oven to 425
Lightly cover the fish with salt and pepper. Set aside
In a small sauce pan, melt the butter and stir in the onion. When fragrant, about 2 - 3 mins, remove from heat and set aside
Grease the baking sheet, and arrange the orange slices in a single layer. Top with the fish fillets. Pour the butter and onion mixture over the fish, brush to ensure more even distribution.
Pour Sherry around the fish.
Bake for 10 mins. Check for doneness and serve.
Recipe Creation:
I have accidentally created this recipe after reading various recipes about roasting baby turnips. While the baby turnips never made it into this recipe, the fish worked out quite well. I decided to serve some greens with the fish, but roasted vegetables will work well as a side.
