Ras Al Hanout:
The Moroccan inspiration of this recipe comes from the Ras Al Hanout spice mix, which can go quite nicely in various fish or vegetarian dishes.
Ingredients:
4 tilapia fillets
1 Cup steel cut oats
¼ Cup parmesan cheese
1 ½ Tbsp mayonnaise or sour cream
1 Tbsp lemon juice, or 1 Tbsp vinegar (Balsamic vinegar may not work, but all others are fine)
1 Tsp Ras al Hanout spice mix (see below)
Salt, to taste
Pepper, to taste
Ras al Hanout spice mix (Makes about 1 tablespoon):
1 teaspoon black pepper
1 teaspoon cardamom
1/4 teaspoon cayenne
1/4 teaspoon ginger powder
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/2 teaspoon turmeric
Directions:
Pre-heat oven to 425 degree.
In a small bowl, make the topping by combining all ingredients except the tilapia, salt, and pepper. Set aside.
Grease the baking sheet with oil, and place the tilapia fillets on the baking sheet. Season with salt and pepper.
Cover the tilapia with the topping. Bake for about 10 mins. Check for doneness and serve.
