Strawberry Banana Crumble

Cooking Tips:

  • While eating freshly baked quiche or pie is a great treat, sometimes it is a luxury. This pie can be baked the night before, and warm in the oven at 250 for 15 mins in the morning.

  • Kale leaves can be hard to chew. Massaging it for a minute or two with oil can break down the hardiness. The kale can also be replaced by spinach.

Ingredients:


  • ¾ Cup old-fashioned rolled oats

  • 1 Cup oat flour, made from blending the rolled oats with a blender

  • ¼ Tsp ground ginger

  • ¼ Tsp kosher salt

  • 3 Tsp coconut oil, melted (or melted butter)

  • 2 Cups strawberries, sliced

  • 2 ripe bananas, sliced

  • ½ Cup of whole milk or half and half

  • 1 egg

  • 4oz of cream cheese

Directions:

  1. Preheat the oven to 375 degrees. Grease the bottom of a pie pan.

  2. In a small bowl, mix the milk, egg, and cream cheese together. Set aside.

  3. In a medium bowl, combine the oats, oat flour, ginger, and salt. Pour in the melted coconut oil and stir until combine. Set aside ½ cup of the crumb mixture, and press the rest into the pie pan.

  4. Arrange the banana slices in a single layer covering the crumb mixture. Scatter the strawberry and any remaining banana slides on top.

  5. Sprinkle the remaining crumb mixture over the fruit.

  6. Pour the milk mixture over the crumble evenly.

  7. Bake for about 35 - 40 mins until the crumb topping smells toasty and looks golden.

Cover with the strawberry, the remaining banana and the crumb mixture. Pour the milk mixture evenly over the crumble before baking.
