Strawberry Banana Kale Pie

Cooking Tips:

  • While eating freshly baked quiche or pie is a great treat, sometimes it is a luxury. This pie can be baked the night before, and warm in the oven at 250 for 15 mins in the morning.

  • Kale leaves can be hard to chew. Massaging it for a minute or two with oil can break down the hardiness. The kale can also be replaced by spinach.

Ingredients:

  • 1 9-inch pie crust

  • 2 ripe bananas, sliced

  • 1 Cup strawberry, sliced

  • 1 Cup of kale leaves, massaged with oil for a min or so and finely chopped

  • 1 1/2 Cup of whole milk or half and half

  • 4 eggs

  • Salt, to taste

  • 8oz of cream cheese

Directions:

  1. Preheat the oven to 375 degrees

  2. Whisk together eggs, milk, and salt. Then blend in the cream cheese until the mixture is smooth. Set aside.

  3. Grease the pie pan and roll out the pie crust.

  4. Arrange the banana slices to cover the bottom of the pie crust in a single layer.

  5. Sprinkle the chopped kale leaves.

  6. Pour the milk and egg mixture over the kale leaves.

  7. Decorate the top with strawberry slices.

  8. Bake for about 30 - 35 mins. Test the doneness with a fork before serving.

Back story:

It is the berry harvest season! I found a local farm near by and took my girls to pick some strawberries. They are so excited about the trip! The recent egg hunt practice clearly did them well in picking strawberries. Within 30 mins, all our baskets were completely full. These strawberries smelled amazing! It was difficult to convince the kids to not eat as they pick. With 10 pounds of strawberries in our fridge, there will likely be a couple strawberry recipes coming up.
